How to prepare date vinegar

1- First, you wash 2.5 kilos of healthy and pest-free dates completely clean and with purified water.

2- You have approximately 2 kilos of cleaned dates after removing the date caps and seeds

3- Cleaned dates are kneaded with some purified water without chlorine and then grinded (the presence of water is necessary to prevent the date paste from sticking to the meat grinder)

4- Put the ground dates in a white polypropylene barrel (plastic barrel with an open mouth) and add four liters of chlorine-free purified water.

5- Choose a container that leaves about 1/4 empty after adding water

Add 2-6 tablespoons of yeast and half a liter of traditional fermented vinegar (never use distilled vinegar) for every two kilos of dates in the barrel.

7- Then stir the contents of the barrel and close the lid completely (starting the anaerobic stage)

8- About 4 to 8 weeks are needed for the alcoholic phase of vinegar to be completed, depending on the type of date and its sweetness (date sugar content).

9- Every week, stir the contents of the barrel well and close the lid

First, the date paste is at the bottom of the container, then the date paste rises to the surface of the container, and then it settles again at the bottom of the barrel, and this step marks the completion of the first step of vinegar preparation.

10- After seeing the date paste settling in the barrel, smooth the contents of the barrel with a completely clean white cloth.

11- Pour the strained liquid into a glass container or barrel made of clean polypropylene according to the volume of the obtained liquid (start of the aerobic phase)

12- Depending on the type of dates used, it takes another 2 to 4 months to make vinegar

13- At this stage, keep the lid of the container with a net cloth in a dark environment with a temperature of 24 to 48 degrees.

14- After some time, a gelatinous layer will form on your vinegar, which is called the mother of vinegar

After 4 to 6 months of mother vinegar settling, empty the container in such a way that the sediment at the bottom of the container does not get disturbed.

15- The color of the obtained vinegar is wine red or light brown depending on the type of dates

16- Pour the obtained vinegar in a glass or pet container and keep it in the refrigerator and drink it.
